Zucchini Fettuccini

Tools: Blender, spiralizer and/or peeler

Ingredients:
3 medium sized zucchini’s – peeled
3 medium sized tomatoes
A handful of fresh basil
3 spring onion stalks
A handful of soaked almonds
½ a large avocado
A squeeze of lemon juice
1 tablespoon of coconut butter.


Directions:
Turn the zucchini into “spaghetti" using the spiralizer. If you don’t have a spiralizer you can use a vegetable peeler for create the “pasta”.

Blend all the other ingredients in a blender to make a creamy tomato sauce.
Mix the sauce with the “pasta”
